  • Cook the Rice:
    • In a saucepan, heat olive oil or butter over medium heat. Add the rice and stir to coat it with the oil. Add cumin, turmeric, and salt, stirring for about 1-2 minutes to toast the rice and release the spices’ fragrance.
    • Add chicken or vegetable broth (or water) and bring to a boil. Reduce the heat to low, cover the pot, and simmer for about 15 minutes or until the rice is cooked and fluffy. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
  • Cook the Protein:
    • Heat olive oil in a skillet over medium-high heat. Season your choice of protein (chicken, beef, lamb, or shrimp) with paprika, garlic powder, onion powder, salt, and pepper.
    • Cook the protein in the skillet for 4-6 minutes (depending on the type) until browned and fully cooked. Remove from heat and set aside.
  • Prepare the Vegetables:
    • In the same skillet, add a little more oil if needed and sauté the onions, carrots, and bell peppers for 5-7 minutes, or until tender. Add the peas, corn, and diced tomatoes (if using), and cook for an additional 2-3 minutes. Season with a pinch of salt and pepper.
  • Assemble the Mixed Rice Platter:
    • On a large serving platter, spread the cooked rice as a base. Top with the sautéed vegetables and your choice of protein.
    • Garnish with chopped fresh parsley or cilantro, and sprinkle sliced almonds or toasted pine nuts for crunch (optional). Serve with lemon wedges on the side.
  • Serve with Sauce:
    • For a creamy element, serve the platter with a drizzle of yogurt sauce made by combining yogurt (or sour cream), tahini (or lemon juice), garlic, salt, and pepper. Stir to combine and drizzle over the rice or serve it on the side.
